Company for Supper

With covid, I got lazy about cooking.  I personally wasn’t going to the grocery store and I think that left me a little uninspired.  I’ve told a few friends of mine that I so appreciate Karl doing the shopping but I really have missed looking at the strawberries and seeing how great they looked and impulsively buying them.  I miss seeing the discounted cold rotisserie chicken and not being inspired to take it home and make chicken and noodle gravy over biscuits.  There is just something about being in the story and seeing the groceries that inspires me to have more variety when I cook.  I am sure some of you who do grocery pick up or have someone in your life like Karl who is doing the shopping for you can relate.

Well a month or so ago I had Kalissa’s family and Karl here for supper.  It was so nice so I wanted to try some new recipes.  The first was Strawberry Cheesecake Chimichangas.  Oh my they were good…and so easy.

I was so excited about actually cooking that I forgot to take pictures until Kalissa said, “Mom, are you taking pictures for the blog”.  Yes, after 11 years of blogging I still forget to take pictures from time to time.  I guess I was in the moment.  Forgive me.

So after whipping up a mixture of cream cheese, sour cream, sugar, vanilla and strawberries, I put that in a tortilla and rolled it up.  Then I fried them like you would a chimichanga.

After that there were rolled in cinnamon and sugar.
We all tried some right away and it was good…but, they are much better after being refrigerated.  Don’t they look yummy???
The family consensus was that we preferred them with a squirt of Redi Whip on them.  YUM.  We’ll make those again only this time I can make them a day in advance and will likely serve them chilled.

The Strawberry Cream Cheese Chimichanga recipe can be found HERE.  I think this would be a fun recipe to make with kids…not the frying part but everything else.

I also made this shrimp dish…Italian Shrimp.  I completely forgot to take pictures of this.  It was good but I really didn’t think the shrimp tasted “Italian”….again in my excitement I forgot to take pictures.

With all of that we also had Sassy Sows…

We love this combo of tator tots, on the bottom….then… BBQ pulled pork…then the coleslaw and then bacon.  We all really love these.  HERE’s the recipe..
