Dinner By Trader Joe‘s

Sometimes a last minute meal can turn out delicious as long as you have the right ingredients. There are many times when you may just have one key ingredient and nothing else to go with it. So, off to the grocery store one must go. It’s at this exact moment that I always go to my favorite store Trader Joe’s. What makes them one of my favorites, besides their prices, is the quality of their food. Always fresh, is an understatement. Good for you, is another understatement. But, my absolute favorite thing about them is their variety of products. It’s easy to put an entire meal together quickly and it will turn out better than take out.

Looking in my fridge to figure out what to make for dinner I had two things to quickly work with: broccoli rabe and shredded mozzarella cheese. Not really a simple pairing with the little time that I had, so I figured the easiest thing to do was make sandwiches for the evening. So off to Trader Joe’s I went.

First, item to grab of course for any sandwich is bread. I wanted to make sure I was able to get a bread that would give me a good crust when toasted up. For that I grabbed the Tuscan Pane a Classic oven baked Italian bread. Next, I grabbed Genova Pesto which I could lightly spread on each side of the bread. Since I was going with an Italian theme, the last item I grabbed was Fire Roasted Red Peppers. These could be sliced up and layed over the broccoli rabe in the sandwich.

Putting the meal together super simple. Chop up broccoli rabe, boil it down to get rid of the bitter taste that I do not enjoy. After draining it, I sautéed it in a pan with fresh chopped garlic, crushed red pepper, and a splash of lemon juice. I assembled the sandwich as a classic melt. Pesto spread and mozzarella cheese on each slice of bread, broccoli rabe mixture topped with sliced roasted red peppers, all melted up!

I did also manage to pick up a bag of frozen pasta, Penne Arrabbiala to be exact. Penne in a spicy tomato sauce basically. It was super simple and quick to make in the pan as I waited on my sandwich to melt. Another delicious addition to my quick and easy meal.
